Ingredients

2 cups seedless watermelon, chopped 
- 
¼ cup fresh mint leaves 
- 
2 tablespoons freshly squeezed lime juice 
- 
1 teaspoon sugar or honey (optional) 
- 
½ cup club soda or lemon-lime soda 
- 
Crushed ice 
- 
Optional: 1 to 1.5 oz white rum (for cocktail version) 
- 
Garnish: lime wheels, watermelon wedges, fresh mint sprigs 
Instructions
- 
Blend Watermelon: 
 Blend watermelon chunks until smooth. Strain if preferred for a smoother texture.
- 
Muddle Mint: 
 In each serving glass, gently muddle mint leaves with lime juice and sugar or honey (if using). Muddle gently to avoid bitterness.
- 
Add Ice & Juice: 
 Fill each glass with crushed ice, then pour watermelon juice evenly into glasses.
- 
Add Soda & Stir: 
 Top each glass with club soda or lemon-lime soda. If making it alcoholic, add white rum now. Stir gently to mix.
- 
Garnish & Serve: 
 Garnish glasses with lime wheels, watermelon wedges, or mint sprigs. Serve immediately, chilled.
Notes
- 
Make the juice ahead and refrigerate, adding soda just before serving to preserve carbonation. 
- 
Use cold watermelon or freeze it first for an even more refreshing result. 
- 
For a spicy twist, rim the glasses with Tajín seasoning or black salt. 
- 
Freeze leftover juice into popsicle molds for refreshing summer treats.
