Ingredients

2 cups seedless watermelon, cut into chunks 
- 
¼ cup fresh lime juice (from about 2 limes) 
- 
¼ cup fresh mint leaves 
- 
¾ cup sparkling water (plain or lime-flavored) 
- 
1 cup crushed ice 
- 
Optional: 1 tsp agave syrup or honey (for added sweetness) 
- 
Garnish: lime wheel, watermelon wedge, extra mint sprigs 
Instructions
- 
Blend the Watermelon & Lime: 
 Place watermelon chunks and lime juice into a blender and blend until smooth. Optionally strain for a smoother texture.
- 
Muddle the Mint: 
 Gently muddle mint leaves in each serving glass using a muddler or the back of a spoon, releasing their oils without bruising.
- 
Assemble the Mocktail: 
 Fill glasses with crushed ice, pour watermelon-lime juice evenly into each glass, and top with sparkling water.
- 
Sweeten to Taste: 
 Taste the mocktail. If needed, stir in agave syrup or honey for extra sweetness.
- 
Garnish and Enjoy: 
 Garnish with lime wheels, fresh mint sprigs, or watermelon wedges. Serve immediately, chilled.
Notes
- 
For extra chill, freeze watermelon chunks ahead of time. 
- 
To add a spicy twist, rim the glasses with Tajín seasoning.

Make ahead tip: Blend watermelon-lime juice in advance and refrigerate, adding sparkling water just before serving.
