Ingredients

  • 4 ripe strawberries (about ½ cup), hulled

  • 2 Tbsp honey or sugar

  • 1 tsp matcha powder (ceremonial or everyday)

  • ¼ cup hot water (just under boiling, ~80 °C)

  • ½¾ cup milk of choice (dairy or plant-based)

  • Handful of ice cubes

  1. Muddle strawberries: In a tall glass, crush strawberries with honey (or sugar) until saucy.

  2. Add ice: Fill the glass about ¾ full with ice to keep the layers distinct.

  3. Pour milk: Slowly add milk over the back of a spoon to avoid disturbing the berry layer.

  4. Whisk matcha: Sift matcha into a small bowl. Add hot water and whisk briskly in “M” or zigzag motions for 30 seconds until frothy.

  5. Layer and serve: Gently pour the frothed matcha over the milk layer. Sip as-is or stir to blend.

  • For a smoother purée, blitz strawberries in a blender instead of muddling.
