Description

This dreamy Strawberry Marshmallow Fluff blends real freeze-dried strawberries and honey for a naturally pink, egg-free treat that whips up in 10 minutes. With no corn syrup and just five wholesome ingredients, it’s a light, nostalgic indulgence perfect for spreading, dipping, or swirling into smoothies. A summer favorite turned everyday delight!


Ingredients

  • ½ cup freeze-dried strawberries, powdered

  • 1 Tbsp gelatin (preferably grass-fed)

  • ¾ cup water, divided

  • 1 cup honey

  • 1 tsp vanilla extract

  • Optional: ½ tsp beet powder (for brighter color)


Instructions

  1. Powder the berries: Blend freeze-dried strawberries into a fine powder; set aside.

  2. Bloom the gelatin: Sprinkle gelatin over ¼ cup of cool water in the stand mixer bowl. Let it sit and absorb.

  3. Cook the syrup: Combine honey with ½ cup water in a medium pot. Heat to exactly 240°F using a candy thermometer.

  4. Whip the base: On low speed, slowly stream the hot syrup into the bloomed gelatin. Increase speed to high and whip for 7–8 minutes until tripled in volume and forming stiff peaks.

  5. Flavor and color: Add strawberry powder, vanilla extract, and optional beet powder. Whip 2–3 minutes more until fluffy and pink.

  6. Jar and set: Transfer fluff to a clean glass jar. Let it cool 30 minutes before using. Store at room temperature for up to 2 weeks.

  • For a creamier dip, mix fluff with cream cheese.

  • Use as a sweet layer in parfaits with Greek yogurt and fresh berries.

  • Microwave 10 seconds to revive firmness after storage.
