Ingredients

1–2 cups filtered water

1 teaspoon grated fresh ginger

Instructions

In a glass or mason jar, soak chia seeds in ½ cup water for 10–15 minutes until gel-like.

Grate the fresh ginger and squeeze out the juice using your fingers or a fine mesh strainer.

Add the ginger juice to the soaked chia seeds along with an additional 1 cup of water.

Stir in lemon or lime juice and honey, if using.

Mix or shake thoroughly, then let rest for 5 more minutes.
