- 1/2 cup honey
- 2 cinnamon sticks
- 1 1/4 cup apple cider
- 3/4 cup grapefruit juice
- 1/4 cup lime juice
- 3/4 cup silver tequila
- 3/4 cup Mezcal or additional tequila
- 2 bottles (12 ounces each) ginger beer
- Sliced apples for serving (optional)
- Sugared rosemary for serving (optional)
- 1 tablespoon coarse sugar (optional for rim)
- 1 tablespoon granulated sugar (optional for rim)
- 1/2 teaspoon chipotle chile powder (optional for rim)
- 1/4 teaspoon cinnamon (optional for rim)
Instructions
- Prepare the cinnamon honey syrup: In a small saucepan, bring 1/2 cup of water, honey, and cinnamon sticks to a boil over high heat. Simmer for 1-2 minutes, then remove from heat and cool.
- Mix the magic: In a large pitcher, combine apple cider, grapefruit juice, lime juice, tequila, Mezcal, and the cinnamon honey syrup. Stir and chill.
- Garnish the glasses (optional): Rim glasses with the sugar mix by running a slice of grapefruit or lime around the edges and dipping in the mixture.
- Serve it up: Fill each glass with ice, pour the Paloma over, and finish with ginger beer. Enjoy as is or create a mocktail by omitting alcohol.
Notes
Use ripe fruit for extra sweetness. Chill ingredients for best flavor. Avoid overdosing on sweetness by balancing with lime or grapefruit juice.
